Production Notes
The 2010 Cabernet Franc was harvested from estate vineyards in late October;
the grapes were crushed, de-stemmed and allowed to cold soak for 3 days before
inoculating with a select strain of yeast. After 10 days the grapes were pressed and
the wine was allowed to under-go a full malo-lactic fermentation using both French
and American oak for 8 months.
Winemaker Notes
The 2010 Cabernet Franc has a floral perfume, and dark berry aromas. On the
palate, hints of black cherry and leather accompany firm tannins and a long finish.
