Mount Etna, Europe's most active volcano, lies in the Northeast corner of Sicily; the largest island in the Mediterranean. The special terroir of volcanic soil and the altitude, makes this grape special. Light in colour, but high in tannins and acid, the grape needs sunshine to ripen, so a delicate balance is needed to give just the right amount of exposure to the sun, while enough of the leafy canopy to keep the grapes from burning under the hot mountain sun.
