Who Rum the World

In the rum world, obtaining both commercial and critical success is a delicate balancing act. In Jamaica's Nasau Valley, Appleton Estate has been maintaining that balance for over 265 years, and for the last 23 years this has largely been thanks to master blender Joy Spence. Joy obtained her Master's in analytical chemistry from Loughborough University in 1978 and joined Appleton Estate as chief chemist in 1981. Her role as chief chemist was purely technical, involving quality assurance tests. Over the following 16 years, Joy would sharpen her sensory skills and in 1997 became the first female master blender in the world. As master blender, she is responsible for selecting which barrels will be used for the numerous rums produced at Appleton Estate.

Joy's scientific background combined with her talent for blending rum has solidified her as a leader in the rum industry. Thanks in part to her accomplishments, a female master blender is no longer a rarity; today Angostura, Brugal, Mount Gay, and Ron Zacapa are just a handful of the rum distilleries lead by a female master blender.

Rum & Raisin Old Fashioned

  • 2 oz Appleton Estate 
  • ¼ oz Alvear Solera PX Sherry 
  • 2 dashes Bittermen's Elemakule Tiki Bitters

Add an orange zest to a mixing glass and gently muddle. Add all ingredients to a mixing glass with ice, and stir for 10-15 seconds. Strain over ice into a rocks glass, and garnish with fresh orange zest.
