Wine Profile
Tasting Notes
Noble Vines 667 exhibits appealing aromas of black cherry, earth and a touch of vanilla. Plush tannins and balanced acidity support core flavors of ripe cherry, bitter-sweet cocoa powder and delicate hints of sage.

Vineyard Notes
On the gentle slopes of our San Bernabe Vineyard, the 667 Pinot Noir clone does especially well in this heavier, darker soil which gives the fruit concentration without too much ripeness. It was planted on the more exposed sites to make it work harder and become even more concentrated. With the inspiring San Bernabe Vineyard at its core, 667 is also blended with grapes from Monterey's Santa Lucia Highlands and Arroyo Seco AVAs.
Winemaker Notes
James Ewart says: "I treat it more like a white wine. I cold soak the must, crushed grapes, for 2 or 3 days using gentle pump-overs to bring out the color and flavor without extracting and bitter seed tannins. I then ferment it at cooler temperatures to lock in the deep color and flavor profile."
Food Pairing Notes
Enjoy on its own or with salmon, veal parmesan or grilled lamb.
